Suzy’s Southwestern Shrimp Recipe | Spice Up Your Summer!


It’s getting hot, and we’re summering hard! We’ve been in Sanibel Island, Florida with our son and daughter-in-law, and we’re having an awesome time! (I hope you’ve been watching my Instagram and Facebook posts, and my Stories to catch all of our fun!)

Today I’m sharing my southwestern shrimp recipe with you! It’s a summertime favorite for this shrimp-loving girl for sure, and it’s perfect for the beach. (I wish I could say that we make it when we’re here…but…we…don’t! We eat breakfast and lunch in our condo, and we go out for dinner pretty much every night!) That said, it is a spicy summertime favorite that I think you’ll love. ????



Suzy’s Southwestern Shrimp
1 lb. large peeled, cooked shrimp
(Can use cooked, frozen.)
1 c. diced jicama
(Don’t worry! You’re not alone if you don’t know what this is! Google it! It’s at any grocery store!)
1/2 c. mild salsa
1 Tbsp. olive oil
1/3 c. chopped cilantro
1/4 tsp. ground cumin
1 ripe avocado, sliced
Serve with warm corn or flour tortillas and lime wedges.
Put shrimp, jicama, salsa, oil, cilantro, and cumin in a medium bowl and toss to mix. Add avocado and gently toss. Roll up in warm tortillas if desired and serve with lime wedges.
Do you change up your meals in the summer? We do! I find we eat a lot more salads and sandwiches. Who wants to be stuck in a hot kitchen in the summer, amirite?
