It’s getting hot, and we’re summering hard at the beach this week! We’re in Sanibel Island, Florida with our son and daughter-in-law, and we’re having an awesome time! (I hope you’ve been watching my Instagram and Facebook posts, and my Stories to catch all of our fun!)

A crazy thing happened! I got to the beach with a couple of books loaded on my Kindle, and some magazines, but then my daughter-in-law and I started chatting about what podcasts we’ve both been listening to lately. She’s been listening to a couple on the enneagram—which is something I’ve wanted to learn about…ya’ know…one of these days! I decided that day should be now, promptly downloaded this book, and now I’m a little obsessed! (It really is a paradigm-shifter in terms of the way you see yourself and others!)

We’re having a blast, and this afternoon my daughter-in-law and I are going shopping. I think vacationing with your adult kids is just about one of the greatest things ever! Don’t you agree?

Today I’m sharing my southwestern shrimp recipe with you! It’s a summertime favorite for this shrimp-loving girl for sure, and it’s perfect for the beach. (I wish I could say that we make it when we’re here…but…we…don’t! We eat breakfast and lunch in our condo, and we go out for dinner pretty much every night!) That said, it is a spicy summertime favorite that I think you’ll love. ????

Suzy’s Southwestern Shrimp ????

1 lb. large peeled, cooked shrimp
(Can use cooked, frozen.)

1 c. diced jicama
(Don’t worry! You’re not alone if you don’t know what this is! Google it! It’s at any grocery store!)

1/2 c. mild salsa

1 Tbsp. olive oil

1/3 c. chopped cilantro

1/4 tsp. ground cumin

1 ripe avocado, sliced

Serve with warm corn or flour tortillas, and lime wedges.

Put shrimp, jicama, salsa, oil, cilantro, and cumin in a medium bowl and toss to mix. Add avocado and gently toss. Roll up in warm tortillas if desired and serve with lime wedges.

Do you change up your meals in the summer? We do! I find we eat a lot more salads (Click HERE and HERE for two of our faves!), and sandwiches. Who wants to be stuck in a hot kitchen in the summer, amirite?! ????

I’m wearing it tucked in, but it features the cutest layered-look hem that’s vented at the sides. Honestly, though, I built this entire outfit around this navy/white gingham belt! It’s under $15, and it’s a spring & summer outfit maker, for sure! My white ankle jeans are by NYDJ, of course, and they sculpt and shape, just like all NYDJ jeans. #cantgetenough

For some reason, it’s tough to find cute navy shoes, but these are the wedges you’ve seen on me for two years now in a variety of colors! They’re easier to walk in than you’d think, fit TTS, and they ship free (+ free returns), so there’s that! #alsocantgetenough
