Suzy’s Protein-Packed Lean & Healthy Tortilla Soup

Empty Nest Blessed by Suzy Mighell

There’s just something about a steaming bowl of tortilla soup that feels like a warm hug — comforting, nourishing, and full of flavor! After my recent oral surgery, I was only allowed to eat soft foods (think soups, cottage cheese, smoothies, applesauce, etc.), and I pulled out this recipe and made a huge batch! (It freezes SO well!)

You probably already know that tortilla soup has its roots in Mexican cuisine, where it’s known as Sopa de Tortilla or Sopa Azteca. Traditionally made with a rich, spiced tomato broth, tender chicken, and Mexican spices, tortilla soup has become a favorite far beyond Mexico for good reason.

Not only is tortilla soup absolutely delicious, but it’s also surprisingly healthy! Thanks to ingredients like tomatoes (loaded with antioxidants like lycopene), garlic and onions (great for immune support), and lean protein from chicken, this soup delivers big-time on both flavor and nutrition. Plus, it’s easy to customize — pile on fresh toppings like avocado for healthy fats, cilantro for extra vitamins, and a squeeze of lime for a burst of vitamin C.

Most traditional tortilla soup recipes feature a base of tomatoes, chicken broth, onions, garlic, and chili peppers for a little heat. Corn and other veggies give the soup its signature texture, while toppings like cheese, avocado, and cilantro make each bowl a customizable masterpiece. My version of tortilla soup has been a family favorite for years, and I can’t wait to share it with you!

Suzy’s Tortilla Soup

SOUP

2 cloves garlic, chopped
1 can stewed tomatoes, pureed
15 oz. can tomato sauce (sometimes I use spagetti sauce!)
1 c. water
4 c. chicken broth
1 tsp. cumin
½ tsp. pepper
1-2 c. chopped cooked chicken breast (or ground chicken breast or ground turkey breast)

OPTIONAL: tortilla chips, can corn, chopped onions, chopped veggies

Cook the meat, seasoning with Ranch Dressing mix (my secret ingredient)! When done, place in a slow cooker and add all other ingredients. Stir gently, cover, and cook on low for 8 hours. To serve, pour into bowls and let everyone garnish to their liking.

OPTIONAL GARNISHES

Lime
Tortilla Chips
Chopped Cilantro
Chopped Avocado
Monterey Jack Cheese

There you have it — a delicious, wholesome, and oh-so-satisfying tortilla soup that’s as easy to make as it is to love! I hope this recipe finds its way into your regular meal rotation and brings a little extra warmth and joy to your table. Don’t forget to make it your own with your favorite toppings and sides — that’s part of the fun! If you give it a try, I’d love to hear how it turned out for you.
